Seasoning:
1 cup of chopped leeks or shallots
3-4 cloves of garlic
1/3 cup of fresh ginger chopped
1 cup of raw cashews
a couple whole pepper flakes for seasoning and anything else u like.
~saute these just a bit, not too long because you want to ginger and garlic fresh for flavor. in fact, you can add the garlic in at the end if you want to really preserve its pop and flavor.
1 cup of quinoa cooking while this is going on
veggies:
~1 yellow and red pepper chopped
~1/2 or 3/4 cup of baby corn
~baby asparagus
~a healthy portion of kale or spinach. add spinach in at the end bc it will wilt so fast, but the kale can manage the heat a bit longer.
~any other veggie you like, mushroom, carrot etc.
add the veggies over the seasoning mix and let them saute together. make sure you don't overcook the veggies, its best when the peppers and veggies have some crunch and life left to them :)
quinoa, veggies and seasoning and a couple dashes of soy sauce to bring it together. wonderful!!
this is a vegan, non-dairy, gluten free dish. enjoy all !

I call this Blueberry Bliss!
A handful of frozen wild blueberries
one half of a frozen banana
1 date
a handful of cashews
1/2 of an avocado
almond milk or water
a few small morsels of raw chocolate (www.gnosischocolate.com)
finally, a few touches of cinnamon :)
Add spinach if u like for more vitamin C!
Also, if you add a vegan protein powder, it will help your body function and keep you satistifed longer! vegan protein can be found at whole foods and at www.sunwarrior.com
